Apple Streusel Coffee Cake
Mix the following dry ingredients in bowl with whisk:
• 1 ½ cups flour
• 2 ¼ teaspoons baking powder
• ½ cup sugar
• ½ teaspoon salt
• 1 teaspoon cinnamon
Melt ¼ cup butter, let cool. Add one beaten egg, ½ cup milk (I used skim Lactaid).
Combine with dry mixture. Add 1 ½ cups chopped Gala apples(you can use any kind you like).
Place mixture in greased 8 inch square pan.
Streusel Topping:
• ½ cup sugar
• ¼ cup flour
• 2-3 tablespoons butter, cut into small pieces
• ¾ teaspoon cinnamon
Mix streusel topping, cutting butter bits into small pieces, spoon over batter
Bake about 25 minutes in a 400 degree oven. Cake is done when toothpick inserted comes out clean.
