Grilled Shrimp & Lemon Basil Orzo Salad

Ingredients for Grilled Shrimp:

olive oil

lemon zest

saffron

garlic

salt & pepper


Combine ingredients and allow shrimp to marinate for about 30 minutes. Grill or sauté in pan.







Ingredients for Lemon Basil Orzo Salad:

1 lb. orzo pasta

1/4 cup chopped onion

1 cup chopped carrots

2 Roma tomatoes, chopped

1/8 cup chopped fresh basil

1/3 cup olive oil

1/3 cup white balsamic vinegar

Juice of one lemon

1/8 teaspoon garlic powder (to taste)

Lawry's Seasoned Salt & Pepper to taste


I typically use the Good & Gather Signature Orzo (Target) The timing on the package says 8-9 minutes, I do 9 minutes. Once it is finished, rinse thoroughly under cool water to remove excess starch. While pasta is cooking, add olive oil, white balsamic, and lemon to bottom of bowl then add onion, carrots (I like to use rainbow carrots), tomatoes, and basil. Add drained pasta, garlic powder, salt and pepper to taste. Mix thoroughly and set aside in the refrigerator for two hours. The pasta absorbs the dressing so mix periodically. Best when sits overnight in the refrigerator. Serve at room temperature.
