Life's a Beach- Eat Chowder!

2 T Extra Virgin Olive Oil

1/4 c pre-cooked chopped bacon)

1 c onion, chopped

1 c celery, chopped

2 c potatoes, cubed in small pieces

2 ears of cooked corn on the cob (3/4 c canned corn)

1 c water

2 c evaporated (or whole) milk

1 heaping T of Better Than Bouillon Seasoned Vegetable Base

3/4 to 1 pound of fresh salmon, cut in 1 inch pieces

fresh dill

2 T butter


Add EVOO to soup kettle and sauté bacon, onion, celery until soft. Add potato cubes, corn and 1 cup of water. Simmer for about 15-20 minutes until potatoes are soft. With heat on low, add evaporated milk, bouillon and salmon. When salmon is cooked through, add fresh dill and butter. Serve with warm, crusty bread, a good book or a football game on a cool autumn day.
